How To make Spicy Cumin Potatoes:-
Boiled potatoes. 3 medium (cubed)
Cumin seeds (jeera) 1½ teaspoons
Green chili (optional) 1, finely chopped
Ginger (optional) 1 tsp, grated
Red chili powder ½ teaspoon (adjust to taste)
Turmeric powder ¼ teaspoon
Coriander powder 1 teaspoon
Garam masala ¼ teaspoon
Amchur (dry mango) powder ½ teaspoon
Salt To taste
Oil 1½ tablespoons
Fresh coriander leaves. 2 tablespoons, chopped

First of all you will need potatoes here. So I have bought 1 kg of potatoes here. I used red potatoes. You can make this with whatever potatoes you have. Now let’s boil the potatoes here. So potatoes get boiled quickly in a pressure cooker. So see, I have put the potatoes in the pressure cooker.

We will add water on top. You have to cover it and cook it for 10 to 12 minutes. Four to five whistles have to be made. In this time the potatoes will be cooked thoroughly. Till then let’s prepare a masala. This spice will give a very nice taste. You have to take one tablespoon of whole coriander. Add one teaspoon of whole cumin seeds to it. You have to add half a teaspoon of fennel in it. I used finely chopped fennel. You can also add thick fennel. Second, add whole chillies to it. You have to remove the seeds from the whole chilli. Now you have to make the gas flame medium. Do not dry roast the spices on medium flame for 3 to 4 minutes. We will do a little dry roast. These spices will bring out a very good flavour. So see, the masala has been dry roasted.

Along with this, you have to take some coriander stalks, ginger and five to six green chillies. You can add more or less chilli as per your taste. Now you have to put these green chillies, ginger and coriander stalks in the grinder jar. And you have to grind them coarsely. If you want to crush them and add them then you can do so. If you don’t want to grind. So see, here I have made a coarse paste. You should not use water here at all. And along with this, whatever masala you must have dry roasted, when it cools down. Add this as well. Kashmiri chilli powder has to be added along with it. This will give a good colour. I did not add spicy chilli here. And you have to add half a teaspoon of turmeric powder to it. And grind these spices together as well. Look, in this way you have to prepare it by making a coarse paste.

This spice will give a very nice taste. Now after this I have bought a stainless steel pan. We will add three to four tablespoons of mustard oil here. You have to heat the mustard oil thoroughly till it starts smoking so that its raw flavor disappears. Look, you have to turn off the gas flame and let the oil cool down a little here. Now let’s take out some oil here. You can also prepare this cumin potato by making it in less oil. Then if you want to prepare it in ghee, you can prepare it in ghee also. So, okay, see, I have taken out some oil here. Like the oil will come to normal temperature here. After this you have to add one teaspoon whole cumin seeds. And along with this you have to add one teaspoon mustard seeds. And add two to three whole chillies to it. And along with this you have to add asafoetida. Asafoetida gives out a very nice flavour. So see, I have added coarse asafoetida here. Now you have to keep the gas flame medium. You have to let the cumin seeds crackle a little on medium flame so that its flavor gets activated. Then whatever spices you have ground, add them here and keep the gas flame medium. You have to cook the spices on medium flame for one and a half to two minutes. Do not cook it on high flame and the spice should not burn. Okay? Look at this. So I have cooked the spices well here. After this you have to add salt to it. So add half a teaspoon of salt to it. And you also have to add dry mango powder to it. So I have added half a teaspoon of dry mango powder. To get a little sour taste, mix salt and dry mango powder well. Now after this let’s check the potatoes

. The potatoes which I had kept for boiling. Look, you don’t have to release steam. When Steam finishes automatically. Then you have to open the lid of the pressure cooker. And after this you have to check the potatoes. How to check? Take the spoon. Look at the spoon like this, see through it. If the spoon goes through it like this, then understand that the potatoes have been boiled well. You have to put the potatoes in a bowl. Let them cool down a little. It should not be cooled too much at all. If you cool it a little then its peel will come off easily. Look how nicely its peel is coming off. Potatoes are cold.little difficult to peel them. Its potatoes have been peeled. Now you have to cut the potatoes. So look at the potato in this way, you have to cut one potato into four pieces. First of all, you have to cut the potatoes into small cubes like this. You do not have to keep too big pieces. What happens if you make bigger pieces? The masala doesn’t stick to it well. Potatoes seem bland to eat. And also add one spoon of ghee to the spices here. Ok? Add some ghee in this manner. You have to mix the ghee well here. And heat the spices slightly here. Then you have to add potatoes. So potatoes are hot here.
