Let’s start today’s recipe. First of all, let’s chop some vegetables first.

First of all, take a mixing bowl and add cabbage and spring onion to it.
When we add salt to onion and cabbage, the moisture comes out of it. So we will first add salt and leave it for 5 minutes. After that, squeeze out the water and make Manchurian. Now 5 minutes have passed.

The vegetables look soft, take them in your hand and squeeze them. When you make kofta or Manchurian, add salt to the vegetables and leave it for 5 minutes. After that, squeeze out. The kofta balls will be cooked well. Otherwise, if the water is removed, you will have to use more maida, gram flour or cornflour for binding. Hence, the taste of the Manchurian balls or kofta balls will be more of maida.

I have removed the cabbage and onion, now we will knead the dough for Manchurian. You can use water. It is up to you whether to knead the dough or use it in the curry. Take another bowl and add all the vegetables to it.

Add 1 1/4 cup corn flour and little less maida. You can also add rice flour, this will make the Manchurian balls crispy.
Take a little portion of the mixture and make small balls out of it. Give it the shape of Manchurian balls of your choice. We will make all the Manchurian balls in this way and fry them immediately. Make sure to fry the Manchurian balls immediately or keep them in the fridge if you do not want to fry immediately.
1 1/4 tsp black pepper powder, 1 1/2 tsp red chilli powder and salt to taste. I am adding 1 1/2 tsp salt, as we have already added salt. Mix it well. Do not use water to mix it, as the moisture in the vegetables will help it mix well. If your mixture is not forming properly, you can add maida or corn flour to it. Let’s start making the balls now. I have cleaned my hands and applied some oil so that it does not stick to my hands.

I have prepared all the Manchurian balls, now we will fry them. I have put the oil to heat for frying. The temperature of the oil should be medium, do not fry on high flame. Otherwise they will become brown from outside and raw from inside.

Keep the flame medium and fry on medium flame till they become golden brown. Our first Manchurian is ready, fry the rest of the Manchurian balls in the same way. We have fried all the Manchurian balls, now let’s move on to the last step. Heat 2 to 3 tablespoons of oil in a pan. As soon as the oil is hot, add all the vegetables to it.
I have taken 2 inch ginger, 2 green chilies, 1 large onion, green and red capsicum and 2 tbsp finely chopped garlic. Garlic is mostly used in Manchurian. As soon as the oil is hot, add ginger, garlic and green chilies and cook for 30 seconds. Cooked ginger and garlic give a nice flavour to this dish. Now we will add all the vegetables together. I have used coloured capsicum but if you don’t have it, then use only green capsicum.
We have to cook the vegetables on high flame for 1 minute, do not overcook. We have fried the vegetables, now reduce the flame and add all the sauces: 1 tbsp red chili sauce, 1 tbsp green chili sauce, 1 tbsp tomato ketchup.
After tomato ketchup, add 1 tsp vinegar, 1 tbsp soy sauce, I use dark soy sauce, 1 tsp black pepper powder, 1 tsp red chili powder and salt as per taste. Make sure to add less salt as all sauces have salt and Manchurian also has salt. Taste it before turning off the flame and add salt accordingly.
Add 2 tbsp cornflour and water to make the batter
We will make the gravy with cornflour. I have prepared a paste here, we will not add the entire cornflour at once, we will add little by little. We have to adjust the consistency of the gravy according to our needs. After adding cornflour, I added 1 cup water and mixed well. We are making gravy Manchurian, so we will use more water. I added the remaining cornflour and mixed well. We will wait for it to boil.
As soon as it starts boiling, it will start thickening. Cornflour thickens the gravy. If your gravy is thick, add water and if it is thin, add cornflour batter. As soon as it starts boiling, it will start thickening.
If you want thick gravy, boil it for a little longer or add Manchurian balls to it. We are making gravy Manchurian, so we will add it to this much gravy. If you want to make dry Manchurian, dissolve 1 tablespoon cornflour and add less water. After adding Manchurian balls, cook it till it boils and serve immediately. Our very tasty Manchurian is ready, I have turned off the gas.
