Preparation :-
- Wheat flour (atta) 1½ cup
- Salt ¼ tsp
- Water (as required)
- Oil (optional) 1 tsp
For the filling:
- Boiled sweet corn ½ cup
- Grated paneer (mozzarella or processed cheese) ½ cup
- Green chili (optional) 1 (finely chopped)
- Coriander leaves 2 tbsp (finely chopped)
- Chat masala or amchur ½ tsp
- Black pepper powder ¼ tsp
- Salt (pinch) (as paneer is salty)
To make cheese corn paratha, we will take two cups of fresh corn here. This is fresh corn.

We have to grind it coarsely. You can also use frozen instead. If you are buying frozen, then normalize it a little at room temperature. So stop running the mixer without adding water to it. If you do this twice then it will grind coarsely. Keep in mind that the crunches of this corn should be visible. Do not make a fine paste. Now what we will do is heat one teaspoon of oil in a pan. Garlic and green chilies bring a very good taste to it. Then we will add onion to it. So add half a cup of finely chopped onion here and fry the onion lightly. Let the onion cook for 1 minute. As soon as the onion becomes a little soft, we will add the corn which we have kept aside after grinding. After this we will add salt to it. So add salt as per taste or add one teaspoon of salt and mix both and fry for half a minute. Turn the gas flame to medium and dry it a little. As soon as you start frying it, the moisture inside the corn will start drying and your mixture will become a little dry. Watch this. Now we will turn off the gas here and leave the mixture to cool down.

When it cools down, we will add cheese to it. So, here the mixture has cooled down. We will add one tablespoon of mix hub or pizza mix to it. Add one-fourth teaspoon crushed black pepper. And after this add paneer to it. I am using mozzarella cheese here. So you can use anything in this and either grate the paneer or you can also add by breaking slices. After adding paneer, we will mix it like this. You can increase or decrease the amount of paneer according to your requirement.

I have one cup paneer. So after adding paneer our stuffing is ready. Now we knead the dough. So for this I have taken two cups of multigrain flour here. We will add half teaspoon salt to the flour and after that add some oil. Mix all the things well.

And when all the things are mixed well, we will add water to it and knead the dough. Whenever you knead the dough for paratha, you have to keep the dough a little soft. Keep in mind that it should not be kneaded too much. If you knead it too much, then when you fill and roll the paratha, the stuffing will start coming out from the edges. And if you make it soft then when you roll it the stuffing will be distributed equally all around you can make its dough immediately. So, I have made medium sized balls of dough and have kept all the ingredients ready here. Put the stuffing here like this and keep the dry flour here for rolling. We will first sprinkle some dry flour on the rolling board. After that, flatten it a little and roll it. Just like you roll a puri, you can also roll it a little bigger than the puri. And after that, we will put the stuffing in the middle and bring the four ends together. So here I tell you two ways of filling the stuffing. Do it in the way which you find easy and if you put more stuffing in it then only this paratha will look good. See, put the stuffing in the middle and bring the edges together. Just like we make momos or modaks, bring it to one place. And after that, flatten it like this and remove the upper part i.e. extra dough and press it a little and roll it and close it and then use the rolling pin so that our stuffing gets distributed equally all around. Don’t start the rolling pin immediately. See this. Now we will roll it slowly like this. If there is more stuffing then don’t roll it too thin. So our paratha has been rolled. So let me tell you another way which is our traditional way of rolling. See this. Put two thumbs in the middle, four fingers outside and rotate it like this. So there will be a hole like this in the middle. We have to put this stuffing in this hole, i.e. in this bowl, and a lot of stuffing goes into it.

Look, you can put as much stuffing in it as you want. Bring the edges together like this and then we will close the edges and seal it with the same process and you close it by twisting it like this. So, when we make Letti Chokha or Aloo Paratha etc., it is made like this only. Now we will apply some dry flour and then flatten it first. Like we did with the first paratha and after that we have to use the rolling pin. Keep this in mind. While operating the roller, keep equal balance on both sides. Do not keep more or less. So our second paratha is also ready. Now let’s move on to the process of baking it. So I turned on the gas and had already heated the pan. Place the paratha on the hot pan and let it cook for 10 to 12 seconds. As soon as one side gets cooked a little, we will turn it over and apply oil or ghee as per your choice on it. I am using ghee here. As soon as a slightly golden brown layer appears on both sides, we will increase the gas flame. By heating it, the paratha starts to puff up. Look, let me show you how to blow it up. So, here I turned the gas flame to high. Press lightly. And this balloon shaped paratha of ours has puffed up. Look at this. As soon as the paratha starts cooking, the cheese will start melting inside it and then it will try to come out from the edges. Look, you can see it from this side, right? So our paratha is ready. We will bake the remaining parathas in the same manner. So keep the gas flame medium or medium high. Let it cook from both sides. Apply oil and ghee and then press lightly. So the paratha puffs up. In this manner we will bake all the parathas. So our cheese corn paratha is ready. We serve it. So while serving, you can serve it with pickle, green chutney or curd.
